Vegan Aubergine Burgers: 7 Steps to Flavorful Delight

Ingredients

  • 1 large aubergine
  • 1 cup breadcrumbs
  • 1/2 cup cooked quinoa
  • 1/4 cup chopped parsley
  • 1 clove garlic, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp olive oil
  • 1 tbsp soy sauce

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Slice the aubergine and roast it for 20 minutes.
  3. In a bowl, combine breadcrumbs, quinoa, parsley, garlic, salt, and pepper.
  4. Add roasted aubergine, olive oil, and soy sauce to the mixture.
  5. Mash everything together until well combined.
  6. Form the mixture into burger patties.
  7. Place patties on a baking sheet and bake for 25 minutes, flipping halfway through.
  8. Serve on a bun with your favorite toppings.
