- 1 large aubergine
- 1 cup breadcrumbs
- 1/2 cup cooked quinoa
- 1/4 cup chopped parsley
- 1 clove garlic, minced
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tbsp olive oil
- 1 tbsp soy sauce
Instructions
- Preheat your oven to 375°F (190°C).
- Slice the aubergine and roast it for 20 minutes.
- In a bowl, combine breadcrumbs, quinoa, parsley, garlic, salt, and pepper.
- Add roasted aubergine, olive oil, and soy sauce to the mixture.
- Mash everything together until well combined.
- Form the mixture into burger patties.
- Place patties on a baking sheet and bake for 25 minutes, flipping halfway through.
- Serve on a bun with your favorite toppings.

- Store leftovers in the fridge for up to 3 days.
- These burgers freeze well.
