Vegan Aubergine Burgers: 4 Ways to Delight Your Taste Buds

A delicious vegan burger made from aubergine.

Ingredients

  • 2 large aubergines
  • 1 cup breadcrumbs
  • 1/2 cup cooked quinoa
  • 1 clove garlic, minced
  • 1 small onion, finely chopped
  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Slice the aubergines in half and scoop out the flesh.
  3. In a pan, heat olive oil and sauté onions and garlic until soft.
  4. Mix the sautéed onions, aubergine flesh, quinoa, breadcrumbs, smoked paprika, salt, and pepper in a bowl.
  5. Form patties from the mixture.
  6. Place the patties on a baking sheet and bake for 25 minutes, flipping halfway.

Notes

  • Serve with your favorite vegan sauce.
  • These burgers can be frozen before baking.
