Ingredients

  • 1 tablespoon olive oil
  • 2 cloves garlic, minced

  • Salt and pepper to taste
  • 1 cup asparagus, trimmed
  • 1 cup cherry tomatoes
  • 1 tablespoon balsamic vinegar
  • 2 cups mixed greens
  • 1/4 cup feta cheese, crumbled

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Season the steak with olive oil, garlic, rosemary, salt, and pepper.
  3. Heat a skillet over medium-high heat and sear the steak for 3-4 minutes on each side.
  4. Transfer the skillet to the oven and cook for an additional 5-7 minutes for medium-rare.
  5. While the steak cooks, toss asparagus and cherry tomatoes with balsamic vinegar, salt, and pepper.
  6. Roast the vegetables in the oven for 10-12 minutes.
  7. Prepare a salad with mixed greens and feta cheese.
  8. Serve the steak with roasted vegetables and salad on the side.
