Ingredients

  • 1 ½ cups graham cracker crumbs
  • ½ cup sugar
  • ½ cup unsalted butter, melted
  • 4 (8 oz) packages cream cheese, softened
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 1 cup sour cream
  • ½ cup fresh strawberries, pureed

Instructions

  1. Preheat the oven to 325°F (163°C).
  2. In a bowl, mix graham cracker crumbs, ½ cup sugar, and melted butter.
  3. Press the mixture into the bottom of a springform pan.
  4. In a large bowl, beat cream cheese until smooth.
  5. Add 1 cup sugar and vanilla extract, mix well.
  6. Add eggs one at a time, mixing after each addition.
  7. Stir in sour cream and strawberry puree until combined.
  8. Pour the cheesecake mixture over the crust.
  9. Bake for 55-60 minutes or until the center is set.
  10. Let it cool before refrigerating for at least 4 hours.

Notes

  • Use fresh strawberries for best flavor.
  • Allow the cheesecake to chill overnight for better texture.
  • Top with additional strawberry puree before serving.
