- 2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 1 cup sugar
- 4 packages (8 ounces each) cream cheese, softened
- 1 teaspoon vanilla extract
- 4 large eggs
- 1 cup sour cream
- 1/2 cup raspberry puree
Instructions
- Preheat oven to 325°F (160°C).
- Mix graham cracker crumbs and melted butter in a bowl.
- Press the mixture into the bottom of a springform pan.
- Beat cream cheese and sugar until smooth.
- Add vanilla and mix.
- Incorporate eggs, one at a time, mixing well.
- Stir in sour cream and mix until combined.
- Pour half of the mixture over the crust.
- Swirl raspberry puree into the cheesecake mixture.
- Pour remaining cheesecake mixture on top.
- Bake for 50-60 minutes until set.
- Cool, then refrigerate for at least 4 hours before serving.
Notes
- Use fresh raspberries for garnish.
- Serve with chocolate sauce for added flavor.
- Try different fruit purees for variety.
