Ingredients

  • 1/2 pound ground beef
  • 1 taco seasoning packet
  • 1 cup black beans, drained and rinsed
  • 1 cup corn, drained
  • 1 cup diced tomatoes
  • 1 cup shredded lettuce
  • 1/2 cup shredded cheese
  • 1/4 cup sour cream
  • 1 avocado, sliced

Instructions

  1. Cook the rice according to package instructions.
  2. In a skillet, brown the ground beef over medium heat.
  3. Add taco seasoning and water, cook until thickened.
  4. In a bowl, layer cooked rice, beef, black beans, corn, and tomatoes.
  5. Top with lettuce, cheese, sour cream, and avocado.

Notes

  • You can use chicken or turkey instead of beef.
