- 1 cup of cooked rice
- 1/2 pound ground beef
- 1 taco seasoning packet
- 1 cup black beans, drained and rinsed
- 1 cup corn, drained
- 1 cup diced tomatoes
- 1 cup shredded lettuce
- 1/2 cup shredded cheese
- 1/4 cup sour cream
- 1 avocado, sliced
Instructions
- Cook the rice according to package instructions.
- In a skillet, brown the ground beef over medium heat.
- Add taco seasoning and water, cook until thickened.
- In a bowl, layer cooked rice, beef, black beans, corn, and tomatoes.
- Top with lettuce, cheese, sour cream, and avocado.
Notes
- You can use chicken or turkey instead of beef.
- Feel free to add jalapeños for extra spice.
