Ingredients

- 2 lbs chicken fillet
- 1 cup diced tomatoes
- 1 cup corn
- 1 cup black beans
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tsp cumin
- 1 tsp chili powder
- Salt and pepper to taste
Instructions
- Place chicken fillet at the bottom of the crockpot.
- Add diced tomatoes, corn, black beans, onion, and garlic.
- Sprinkle cumin, chili powder, salt, and pepper over the top.
- Cover and cook on low for 6 hours or high for 3 hours.
- Shred chicken before serving.
Notes
- Serve with tortillas or over rice.
- Store leftovers in the fridge for up to 3 days.
