Ingredients

  • 2 lbs chicken fillet
  • 1 cup diced tomatoes
  • 1 cup corn
  • 1 cup black beans
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste

Instructions

  1. Place chicken fillet at the bottom of the crockpot.
  2. Add diced tomatoes, corn, black beans, onion, and garlic.
  3. Sprinkle cumin, chili powder, salt, and pepper over the top.
  4. Cover and cook on low for 6 hours or high for 3 hours.
  5. Shred chicken before serving.

Notes

  • Serve with tortillas or over rice.
  • Store leftovers in the fridge for up to 3 days.
