- 2 aubergines, sliced
- 1 cup mozzarella cheese, shredded
- 1 can diced tomatoes
- 2 cloves garlic, minced
- 1 teaspoon chili flakes
- 2 tablespoons olive oil
- Salt to taste
- Black pepper to taste
- Fresh basil for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- Slice the aubergines and sprinkle with salt. Let sit for 15 minutes.
- Rinse the salt off and pat the aubergines dry with a paper towel.
- In a large bowl, mix olive oil, minced garlic, chili flakes, salt, and pepper.
- Add aubergine slices to the bowl and coat them well.
- Spread the aubergine slices on a baking tray.
- Pour the diced tomatoes over the aubergines.
- Sprinkle mozzarella cheese on top.
- Bake for 25-30 minutes until golden and bubbly.
- Garnish with fresh basil before serving.
