Ingredients

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Slice the aubergines and sprinkle with salt. Let sit for 15 minutes.
  3. Rinse the salt off and pat the aubergines dry with a paper towel.
  4. In a large bowl, mix olive oil, minced garlic, chili flakes, salt, and pepper.
  5. Add aubergine slices to the bowl and coat them well.
  6. Spread the aubergine slices on a baking tray.
  7. Pour the diced tomatoes over the aubergines.
  8. Sprinkle mozzarella cheese on top.
  9. Bake for 25-30 minutes until golden and bubbly.
