- 1 lb ground beef
- 1 tsp paprika
- 1 tsp cumin
- 1/2 tsp cayenne pepper
- 1/2 cup chopped onion
- 2 cloves garlic, minced
- 1 can (15 oz) chickpeas, drained
- 1 cup bulgur wheat
- 2 cups vegetable broth
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- In a bowl, mix ground beef with paprika, cumin, cayenne, salt, and pepper.
- Form the mixture into meatballs.
- Heat olive oil in a pan and brown the meatballs on all sides.
- Add chopped onion and garlic, sauté until softened.
- Stir in chickpeas and bulgur.
- Pour vegetable broth over the mixture and bring to a boil.
- Reduce heat, cover, and simmer for 15-20 minutes until bulgur is cooked.
- Serve hot.

- Garnish with fresh herbs if desired.
- Can substitute ground turkey for a lighter option.
