Ingredients

  • 2 lbs beef stew meat, cut into chunks
  • 1 onion, chopped
  • 3 carrots, sliced
  • 3 potatoes, diced
  • 2 cloves garlic, minced
  • 3 cups beef broth
  • 1 tbsp tomato paste
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp flour (for thickening)

Instructions

  1. Place beef, onion, carrots, potatoes, and garlic in the slow cooker.
  2. In a bowl, whisk together beef broth, tomato paste, thyme, rosemary, salt, and pepper.
  3. Pour the mixture over the beef and vegetables.
  4. Cook on low for 8 hours or high for 4 hours.
  5. In the last 30 minutes, mix flour with a little water and stir into the stew to thicken.
  6. Serve hot.

Notes

  • You can use fresh herbs if available.
  • Add more broth if you prefer a thinner stew.
  • This stew tastes even better the next day.
