- 2 lbs beef stew meat, cut into chunks
- 1 onion, chopped
- 3 carrots, sliced
- 3 potatoes, diced
- 2 cloves garlic, minced
- 3 cups beef broth
- 1 tbsp tomato paste
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp flour (for thickening)
Instructions
- Place beef, onion, carrots, potatoes, and garlic in the slow cooker.
- In a bowl, whisk together beef broth, tomato paste, thyme, rosemary, salt, and pepper.
- Pour the mixture over the beef and vegetables.
- Cook on low for 8 hours or high for 4 hours.
- In the last 30 minutes, mix flour with a little water and stir into the stew to thicken.
- Serve hot.
Notes
- You can use fresh herbs if available.
- Add more broth if you prefer a thinner stew.
- This stew tastes even better the next day.
