- 2 cups sunchokes, peeled and diced
- 2 tablespoons olive oil

- 4 cups mixed greens
- 1/4 cup walnuts, chopped
- 1/4 cup feta cheese, crumbled
- 2 tablespoons balsamic vinaigrette
Instructions
- Preheat the oven to 400°F (200°C).
- Toss the sunchokes with olive oil, salt, and pepper.
- Spread sunchokes on a baking sheet.
- Roast for 25-30 minutes until golden brown.
- In a large bowl, combine mixed greens, walnuts, and feta cheese.
- Add roasted sunchokes to the salad.
- Drizzle with balsamic vinaigrette and toss gently.
- Serve immediately.

- Adjust seasoning to taste.
- Can substitute walnuts with pecans.
