- 1 lb Quorn mince
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 2 cloves garlic, minced
- 1 cup vegetable broth
- 1 tablespoon tomato paste
- 1 teaspoon dried thyme
- 1 teaspoon Worcestershire sauce
- 4 cups mashed potatoes
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- In a large pan, sauté the onion, carrots, celery, and garlic until soft.
- Add the Quorn mince and cook for 5 minutes.
- Stir in the vegetable broth, tomato paste, thyme, Worcestershire sauce, salt, and pepper.
- Simmer for 10 minutes, then transfer to a baking dish.
- Spread the mashed potatoes over the top.
- Bake for 25 minutes or until golden brown.
Notes
- Use vegan mashed potatoes for a vegan option.
- Add peas for extra texture.
- Let it cool slightly before serving.
