Quinoa Salad: 7 Reasons You’ll Crave This Delightful Dish

Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1 cucumber, diced
  • 1 bell pepper, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup red onion, finely chopped
  • 1/4 cup parsley, chopped
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instructions

  1. Rinse quinoa under cold water.
  2. Combine quinoa and water in a pot.
  3. Bring to a boil, then reduce heat and simmer for 15 minutes.
  4. Fluff quinoa with a fork and let it cool.
  5. In a large bowl, combine cooled quinoa, cucumber, bell pepper, cherry tomatoes, red onion, and parsley.
  6. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
  7. Pour dressing over the salad and toss to combine.
  8. Serve chilled or at room temperature.
