- 1 prime rib roast (5–7 lbs)
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 2 tablespoons fresh rosemary, chopped
- 2 tablespoons fresh thyme, chopped
- Salt and pepper to taste
- 2 cups beef broth
Instructions
- Preheat your oven to 450°F (232°C).
- Mix olive oil, garlic, rosemary, thyme, salt, and pepper in a bowl.
- Rub the mixture all over the prime rib.
- Place the roast in a roasting pan, bone side down.
- Roast in the oven for 20 minutes.
- Reduce the temperature to 325°F (163°C) and roast for an additional 1.5 to 2 hours.
- Check the internal temperature; it should reach 130°F (54°C) for medium-rare.
- Remove the roast from the oven and let it rest for 20 minutes before slicing.

- Use a meat thermometer for accurate cooking.
- Pair with your favorite sides like mashed potatoes or green beans.
- Leftovers can be used for sandwiches.
