Ingredients

  • 4 boneless, skinless chicken fillets
  • 1/2 cup all-purpose flour
  • 1/4 cup olive oil
  • 1/4 cup unsalted butter
  • 1/2 cup fresh lemon juice
  • 1/2 cup chicken broth
  • 1/4 cup capers
  • Salt and pepper to taste
  • Chopped parsley for garnish

Instructions

  1. Pound the chicken fillets to an even thickness.
  2. Season chicken with salt and pepper.
  3. Dredge chicken in flour, shaking off excess.
  4. Heat olive oil and butter in a large skillet over medium heat.
  5. Add chicken and cook until golden brown, about 5 minutes per side.
  6. Remove chicken from skillet and set aside.
  7. Add lemon juice, chicken broth, and capers to the skillet.
  8. Bring to a simmer and cook for 5 minutes.
  9. Return chicken to the skillet and cook for another 5 minutes.
  10. Garnish with parsley before serving.

Notes

  • Serve with pasta or rice.
  • Adjust lemon juice to taste.
  • Can substitute chicken broth with white wine.
