Ingredients
Scale
- 2 leeks, cleaned and sliced
- 4 cups kale, chopped
- 2 tablespoons olive oil
- 4 eggs
- 1 tablespoon fresh sage, chopped

Instructions
- Heat olive oil in a skillet over medium heat.
- Add leeks and sauté until soft.
- Add kale and cook until wilted.
- Season with salt and pepper.
- In another pan, fry eggs with sage until the whites are set.
- Top the leek and kale mixture with the fried eggs.
