- 4 cups kale, chopped
- 1 cup carrots, shredded
- 1/2 cup red cabbage, shredded

- 1/4 cup olive oil

Instructions
- Wash and chop the kale into bite-sized pieces.
- In a large bowl, combine kale, carrots, red cabbage, green onions, almonds, and raisins.
- In a separate bowl, whisk together olive oil, apple cider vinegar, ginger, and honey.
- Pour the dressing over the salad and toss to combine.
- Let the salad sit for 10 minutes to allow flavors to meld.
- Serve chilled or at room temperature.
