Ingredients

- 2 lbs pork shoulder
- 2 tablespoons jerk seasoning
- 1 tablespoon olive oil
- 4 sweet potatoes
- 2 tablespoons butter
- 1/4 cup milk
- Salt to taste
Instructions
- Preheat the oven to 350°F (175°C).
- Rub the jerk seasoning on the pork shoulder and let it marinate for at least 1 hour.
- Heat olive oil in a pan and sear the pork on all sides.
- Transfer the pork to a baking dish and cover it with foil.
- Bake for 2 hours or until tender.
- While the pork is baking, peel and chop the sweet potatoes.
- Boil sweet potatoes in salted water until tender, about 15 minutes.
- Drain sweet potatoes and mash them with butter and milk until smooth.
- Season mash with salt to taste.
- Serve the jerk pork with sweet potato mash.
Notes
- Allow the pork to rest for 10 minutes before slicing.
- Adjust the spice level of the jerk seasoning to your preference.
