Ingredients

  • 2 lbs pork shoulder
  • 2 tablespoons jerk seasoning
  • 1 tablespoon olive oil
  • 4 sweet potatoes
  • 2 tablespoons butter
  • 1/4 cup milk
  • Salt to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Rub the jerk seasoning on the pork shoulder and let it marinate for at least 1 hour.
  3. Heat olive oil in a pan and sear the pork on all sides.
  4. Transfer the pork to a baking dish and cover it with foil.
  5. Bake for 2 hours or until tender.
  6. While the pork is baking, peel and chop the sweet potatoes.
  7. Boil sweet potatoes in salted water until tender, about 15 minutes.
  8. Drain sweet potatoes and mash them with butter and milk until smooth.
  9. Season mash with salt to taste.
  10. Serve the jerk pork with sweet potato mash.
