Ingredients

- 2 lbs pork shoulder
- 2 tbsp jerk seasoning
- 1 tbsp olive oil
- 4 sweet potatoes
- 1/2 cup milk
- 2 tbsp butter
- Salt to taste
Instructions
- Preheat the oven to 350°F (175°C).
- Rub the pork shoulder with jerk seasoning and olive oil.
- Place the pork in a roasting pan and cover with aluminum foil.
- Roast for 3 hours or until tender.
- While the pork cooks, peel and chop the sweet potatoes.
- Boil the sweet potatoes in salted water until tender.
- Drain and mash the sweet potatoes with milk and butter.
- Season the mash with salt to taste.
- Slice the cooked pork and serve with sweet potato mash.
Notes
- Adjust jerk seasoning to your heat preference.
- Let the pork rest before slicing for better juices.
