Ingredients

  • 2 lbs pork shoulder
  • 2 tbsp jerk seasoning
  • 1 tbsp olive oil
  • 4 sweet potatoes
  • 1/2 cup milk
  • 2 tbsp butter
  • Salt to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Rub the pork shoulder with jerk seasoning and olive oil.
  3. Place the pork in a roasting pan and cover with aluminum foil.
  4. Roast for 3 hours or until tender.
  5. While the pork cooks, peel and chop the sweet potatoes.
  6. Boil the sweet potatoes in salted water until tender.
  7. Drain and mash the sweet potatoes with milk and butter.
  8. Season the mash with salt to taste.
  9. Slice the cooked pork and serve with sweet potato mash.
