Ingredients

  • 1 cup brown sugar, packed

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix flour, cocoa powder, baking soda, and salt.
  3. In another bowl, cream butter, granulated sugar, and brown sugar until smooth.
  4. Add eggs and vanilla to the butter mixture, mix well.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until combined.
  6. Drop tablespoonfuls of dough onto baking sheets.
  7. Bake for 10-12 minutes, then cool on racks.
  8. Once cooled, scoop ice cream onto one cookie and top with another cookie.
  9. Wrap in plastic and freeze for at least 1 hour.
