Instructions
- In a large bowl, combine Greek yogurt, cucumber, cherry tomatoes, red onion, and parsley.
- In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
- Pour the dressing over the salad and mix well.
- Chill in the refrigerator for 30 minutes before serving.
