Instructions
- Preheat oven to 350°F (175°C).
- Grease a muffin tin or line with muffin cups.
- In a bowl, whisk eggs and milk together.
- Stir in cheese, bell peppers, onions, and cooked meat if using.
- Season with salt and pepper.
- Pour mixture evenly into muffin cups.
- Bake for 20-25 minutes until set.
- Let cool slightly before serving.

- Store leftovers in the fridge for up to 3 days.
- Reheat in microwave for 30 seconds.
- Add spinach or mushrooms for extra veggies.
