- 4 cups mashed sweet potatoes
- 1/2 cup sugar
- 1/2 cup milk
- 1/4 cup butter
- 2 eggs
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- 1 cup mini marshmallows
Instructions
- Preheat your oven to 350°F (175°C).
- Boil sweet potatoes until tender and mash them.
- In a bowl, combine mashed sweet potatoes, sugar, milk, butter, eggs, vanilla, and salt.
- Mix until smooth and pour into a greased baking dish.
- Top with mini marshmallows.
- Bake for 30 minutes or until marshmallows are golden brown.
Notes
- Allow the casserole to cool before serving.
- Store leftovers in the refrigerator for up to 3 days.
- Can be made a day in advance and baked before serving.
