- 400g fresh salmon fillets
- 200g mashed potatoes
- 1 small onion, finely chopped
- 1 egg, beaten
- 2 tablespoons chopped fresh parsley
- Salt and pepper to taste
- Breadcrumbs for coating
- Oil for frying
Instructions
- Cook the salmon in boiling water for 10 minutes. Drain and flake into pieces.
- In a bowl, combine the flaked salmon, mashed potatoes, onion, egg, parsley, salt, and pepper.
- Form the mixture into patties.
- Coat each patty in breadcrumbs.
- Heat oil in a frying pan over medium heat.
- Fry the fishcakes for 4-5 minutes on each side until golden brown.
- Serve hot with your choice of sauce.
Notes
- Use canned salmon for a quicker option.
- Serve with a side salad for a complete meal.
- Fishcakes can be frozen before frying.
