Ingredients

- 1 cup basmati rice
- 2 cups water
- 1 cup mixed vegetables
- 1 onion, chopped
- 2 tomatoes, chopped
- 2 tablespoons curry powder
- 1 teaspoon salt
- 1 tablespoon oil
Instructions
- Heat oil in a pan and sauté onions until golden.
- Add tomatoes and cook until soft.
- Stir in mixed vegetables and curry powder.
- Add rice, water, and salt to the crockpot.
- Mix in the sautéed mixture.
- Cover and cook on low for 4-5 hours.
- Fluff the rice before serving.
