Ingredients

- 1 whole chicken, about 4–5 lbs
- 2 cups of chicken broth
- 1 onion, chopped
- 3 cloves of garlic, minced
- 2 carrots, sliced
- 2 celery stalks, chopped
- 1 tablespoon of thyme
- 1 tablespoon of rosemary
- Salt and pepper to taste
Instructions
- Place the chopped onion, garlic, carrots, and celery in the bottom of the crockpot.
- Season the whole chicken with thyme, rosemary, salt, and pepper.
- Place the chicken on top of the vegetables in the crockpot.
- Pour the chicken broth over the chicken.
- Cover and cook on low for 6-8 hours or high for 4-5 hours.
- Once cooked, remove the chicken and let it rest before carving.
- Serve with the cooked vegetables and broth.
Notes
- Adjust cooking time based on your crockpot model.
- Use leftover chicken for sandwiches or salads.
- Feel free to add other vegetables like potatoes.
