Instructions
- Place the chicken thighs in the crockpot.
- Add the chopped vegetables.
- Pour the diced tomatoes and chicken broth over the top.
- Sprinkle garlic powder, paprika, salt, and pepper.
- Cover and cook on low for 6-8 hours or until chicken is cooked through.
- Shred the chicken before serving.
