Ingredients

- 2 pounds of chicken thighs
- 1 cup of diced onions
- 2 cups of diced carrots
- 3 cups of chicken broth
- 2 teaspoons of garlic powder
- 1 teaspoon of salt
- 1 teaspoon of black pepper
- 2 cups of chopped spinach
Instructions
- Place chicken thighs at the bottom of the crockpot.
- Add onions and carrots on top of the chicken.
- Pour in the chicken broth.
- Sprinkle garlic powder, salt, and pepper over the mixture.
- Cover and cook on low for 6-8 hours.
- Stir in chopped spinach 30 minutes before serving.
Notes
- For a thicker broth, remove some liquid and thicken with cornstarch.
- You can substitute chicken with beef or pork.
- Adjust seasonings to your taste.
