- 1 lb pork tenderloin, diced
- 2 cups chicken broth
- 1 cup heavy cream
- 1 cup carrots, chopped
- 1 cup celery, chopped
- 1 onion, diced
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon thyme
- Salt and pepper to taste
Instructions
- Heat olive oil in a pot over medium heat.
- Add onion, garlic, carrots, and celery. Sauté until vegetables soften.
- Add diced pork and cook until browned.
- Pour in chicken broth and bring to a boil.
- Reduce heat and simmer for 20 minutes.
- Stir in heavy cream and thyme. Cook for an additional 5 minutes.
- Season with salt and pepper. Serve hot.
