- 2 lbs fresh mussels
- 1 cup heavy cream
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 cups fish stock
- 1/2 cup white wine
- 2 tbsp butter
- Salt to taste
- Pepper to taste
Instructions
- Clean the mussels under cold water and remove any beards.
- In a large pot, melt butter over medium heat. Add onion and garlic, cooking until softened.
- Add white wine and bring to a simmer.
- Add mussels and fish stock, cover, and steam until mussels open.
- Remove mussels from the pot and set aside. Strain the broth.
- Return broth to the pot, stir in heavy cream, and simmer gently.
- Blend the mixture until smooth, then season with salt and pepper.
- Add mussels back to the bisque and heat through before serving.
Notes
- Use fresh mussels for the best flavor.
- Adjust seasoning according to your taste.
