Ingredients

  • 2 lbs fresh mussels
  • 1 cup heavy cream
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups fish stock
  • 1/2 cup white wine
  • 2 tbsp butter
  • Salt to taste
  • Pepper to taste

Instructions

  1. Clean the mussels under cold water and remove any beards.
  2. In a large pot, melt butter over medium heat. Add onion and garlic, cooking until softened.
  3. Add white wine and bring to a simmer.
  4. Add mussels and fish stock, cover, and steam until mussels open.
  5. Remove mussels from the pot and set aside. Strain the broth.
  6. Return broth to the pot, stir in heavy cream, and simmer gently.
  7. Blend the mixture until smooth, then season with salt and pepper.
  8. Add mussels back to the bisque and heat through before serving.

Notes
