- 1 pound mushrooms, sliced
- 1 onion, chopped
- 2 garlic cloves, minced
- 4 cups vegetable broth
- 1 cup heavy cream
- 2 tablespoons olive oil
- Salt to taste
- Pepper to taste
- Fresh parsley, chopped for garnish
Instructions
- Heat olive oil in a pot over medium heat.
- Add onion and garlic, and sauté until soft.
- Add mushrooms, and cook until they release moisture.
- Pour in vegetable broth and bring to a boil.
- Simmer for 15 minutes.
- Blend the soup until smooth.
- Stir in heavy cream and heat through.
- Season with salt and pepper.
- Garnish with fresh parsley before serving.
Notes
- Use any type of mushrooms for different flavors.
- For a vegan option, substitute heavy cream with coconut cream.
- This soup can be frozen for later use.
