Ingredients

  • 2 lobsters, cooked and chopped
  • 4 cups seafood stock

  • 1/4 cup brandy
  • 2 tablespoons tomato paste
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Chopped chives for garnish

Instructions

  1. In a pot, sauté onion and garlic until soft.
  2. Add tomato paste, lobster, and paprika. Cook for 2 minutes.
  3. Pour in the brandy and let it simmer for 1 minute.
  4. Add the seafood stock and bring to a boil.
  5. Reduce heat and let it simmer for 20 minutes.
  6. Blend the mixture until smooth.
  7. Stir in the heavy cream and season with salt and pepper.
  8. Heat gently without boiling.
  9. Serve warm, garnished with chives.
