Ingredients

- 2 tablespoons olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 carrot, diced
- 1 stalk celery, diced
- 1 pound fish fillets, chopped
- 4 cups fish stock
- 1 cup heavy cream
- 1 teaspoon thyme
- Salt and pepper to taste
Instructions
- Heat olive oil in a pot over medium heat.
- Add onion, garlic, carrot, and celery. Sauté until softened.
- Add fish fillets and cook for 5 minutes.
- Pour in fish stock and bring to a simmer.
- Cook for 10 minutes, then stir in heavy cream and thyme.
- Season with salt and pepper.
- Blend until smooth and serve hot.

- Use any firm white fish.
- Adjust seasoning to your taste.
- Garnish with fresh herbs if desired.
