Ingredients

  • 1 lb chicken thighs, diced
  • 8 oz chorizo, sliced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 can (14 oz) diced tomatoes
  • 1 cup chicken broth
  • 1 tsp smoked paprika
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and garlic, sauté until softened.
  3. Add chorizo and cook until browned.
  4. Add chicken and cook until no longer pink.
  5. Add bell pepper, tomatoes, chicken broth, and paprika.
  6. Season with salt and pepper, simmer for 30 minutes.
  7. Serve hot with your choice of side.

Notes

  • For a thicker ragu, simmer longer.
  • Serve with pasta, rice, or crusty bread.
  • You can substitute turkey for chicken if desired.
