Ingredients

- 1 lb chicken thighs, diced
- 8 oz chorizo, sliced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 can (14 oz) diced tomatoes
- 1 cup chicken broth
- 1 tsp smoked paprika
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion and garlic, sauté until softened.
- Add chorizo and cook until browned.
- Add chicken and cook until no longer pink.
- Add bell pepper, tomatoes, chicken broth, and paprika.
- Season with salt and pepper, simmer for 30 minutes.
- Serve hot with your choice of side.
Notes
- For a thicker ragu, simmer longer.
- Serve with pasta, rice, or crusty bread.
- You can substitute turkey for chicken if desired.
