- 1 lb ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 tsp cumin
- 1 tsp chili powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 8 corn tortillas
- 2 cups enchilada sauce
- 1 1/2 cups shredded cheddar cheese
- 1/4 cup chopped fresh cilantro
Instructions
- Preheat oven to 375°F.
- Brown ground beef in a skillet over medium heat. Add onion, garlic, cumin, chili powder, salt, and pepper. Cook until onions soften.
- Warm tortillas in a dry skillet or microwave to make them pliable.
- Spread 1/2 cup enchilada sauce in the bottom of a baking dish.
- Fill each tortilla with beef mixture and roll. Place seam-side down in the dish.
- Pour remaining sauce over enchiladas. Sprinkle with cheese.
- Bake for 20 minutes until cheese melts and bubbles.
- Garnish with cilantro before serving.
Notes
- Use leftover shredded beef for extra flavor.
- Add a can of drained black beans to the filling for more texture.
- For spicier enchiladas, use hot enchilada sauce.
