- 4 veggie sausages
- 1 bell pepper, diced
- 1 onion, diced
- 1 cup mushrooms, sliced
- 1 can diced tomatoes
- 1 tsp olive oil
- 1 tsp dried herbs
- Salt and pepper to taste
Instructions
- Preheat the air fryer to 180°C (350°F).
- Slice the veggie sausages into bite-sized pieces.
- Toss the sausages, bell pepper, onion, and mushrooms with olive oil, dried herbs, salt, and pepper.
- Place the mixture in the air fryer basket.
- Cook for 12 minutes, shaking the basket halfway.
- Add the diced tomatoes and cook for another 5 minutes.
- Serve hot.

- You can swap veggies based on preference.
- Add cheese on top for extra flavor if desired.
