- 200g prawns, peeled and deveined
- 200g rice noodles
- 2 tbsp miso paste
- 1 tbsp grated ginger
- 2 tbsp soy sauce
- 1 tbsp sesame oil
- 1 tbsp honey
- 1 cup shredded lettuce
- 1 carrot, julienned
- 1 red bell pepper, thinly sliced
- 2 green onions, chopped
- 1 tbsp sesame seeds
Instructions
- Cook rice noodles according to package instructions. Drain and rinse under cold water.
- In a bowl, mix miso paste, ginger, soy sauce, sesame oil, and honey to make the dressing.
- Heat a pan over medium heat. Cook prawns for 2-3 minutes until pink.
- Toss noodles, prawns, lettuce, carrot, bell pepper, and green onions in a large bowl.
- Pour dressing over the salad and mix well.
- Sprinkle with sesame seeds before serving.
Notes
- Use fresh prawns for best flavor.
- Adjust honey for sweetness preference.
- Add chili flakes for a spicy kick.
