Ingredients

  • 200g prawns, peeled and deveined
  • 200g rice noodles
  • 2 tbsp miso paste
  • 1 tbsp grated ginger
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp honey
  • 1 cup shredded lettuce
  • 1 carrot, julienned
  • 1 red bell pepper, thinly sliced
  • 2 green onions, chopped
  • 1 tbsp sesame seeds

Instructions

  1. Cook rice noodles according to package instructions. Drain and rinse under cold water.
  2. In a bowl, mix miso paste, ginger, soy sauce, sesame oil, and honey to make the dressing.
  3. Heat a pan over medium heat. Cook prawns for 2-3 minutes until pink.
  4. Toss noodles, prawns, lettuce, carrot, bell pepper, and green onions in a large bowl.
  5. Pour dressing over the salad and mix well.
  6. Sprinkle with sesame seeds before serving.
